Viticulture
This cuvée comes from a lovely little plot nestled between the houses of La Neuveville, on the shores of Lake Biel. The soil here is very heavy and marly, similar to that found in part of the French Jura vineyards. Viticulture is extensive and the vines are grown free-standing.
Oenology
The grapes are harvested on 22 September and pressed in a vertical manual press. The must is then settled before being placed in two small vats (2nd and 3rd passage) for fermentation. In mid-April 2023, the small vats are assembled in a barrel (3rd passage), which restarts the alcoholic fermentation. This ends in early August, while the malolactic fermentation has taken place in the meantime. The wine continues to age until April 2024, when it is then placed in stainless steel vats for a few more weeks.
