This Pinot Gris comes from a schist terroir in the commune of Saillon. A few bunches of Sylvaner de treilles de Martigny and a few bunches of Pinot Gris de Corin are added to this late harvest.
Oenology
The harvest took place on 18 and 19 November and the must reached a temperature of almost 220°Oe! Immediately put into a new cask, it fermented for a long time and continued to age for almost 7 years... Unfiltered, the wine was bottled on 3 August 2022. With more than 400g of residual sugar, this wine is out of the ordinary, yet perfectly balanced.
