This Chasselas comes from a terraced plot in the Plan-Cerisier region of Martigny, in the place known as Les Bans. These old, steeply sloping vines are rooted in a predominantly granitic soil.
Oenology
The juice is pressed in a traditional way, on a vertical press, and fermented in stainless steel tanks with indigenous yeasts. Malolactic fermentation takes place the following spring. The wine is bottled by gravity, without filtration.
Suggestions for accompaniment
Aperitif, cheese dishes, perch fillets, fish mousse.
