This rare wine comes from the schistose hillside of St-Pierre de Soucy. It has long been renowned and should have been classified as an AOC, but administrative difficulties have put the brakes on the project. Here, from Jacquère, Chardonnay and the rare white Mondeuse, the young Brice Omont vinifies an aromatic white (lemon peel, chlorophyll), chiselled and taut. The saline finish is sublime!

Technique

Viticulture

Terroir of vines on west-facing slopes with hard black schist and the presence of clay. Guyot and Cordon de Royat pruning for the different grape varieties grown. The average yield is about 40 hl/ha. Certified organic cultivation.

Oenology

Vinification using indigenous yeasts. Aged for 8 months with 1/3 in two- and three-wine barrels and the rest in vats.

Suggestions for accompaniment

Sea bass with porcini mushrooms - Pan-fried prawns with curry - Scallops a la plancha and candied endives.

Ardoisières

Located in the commune of Cevins, the Domaine des Ardoisières was created in 1999 on a hillside that was cultivated a few decades ago but has since been completely reclaimed by the forest. Once the forest had been cleared, the vines were planted and cultivated from the outset using biodynamic methods. The hillside of Cevins is made up of a glacial lock facing south, with low dry stone walls. Gobelet pruning on a stile. Average yield: 20 hl/ha.
