A bright and crystalline white wine from Savoie, the latest creation from the great Brice Omon. The nose reveals subtle aromas of fresh pear, lemon zest, mountain flowers and damp stone, with a delicate smoky note in the background. On the palate, the structure is chiselled with a lively attack, pure and taut, and a long finish carried by marked minerality and vibrant salinity. A straightforward, precise wine that perfectly captures the energy of the high-altitude terroirs.

Viticulture

This is the first vintage for this cuvée, from a new terroir on the estate! 100% Roussanne from organically farmed vines planted on the Arbin hillside, south-east facing slopes with clay-limestone soils and red clay.

Oenology

Hand-picked grapes and natural winemaking: direct pressing of whole bunches, fermentation and ageing for 10 months in amphorae, vats and barrels that have been used for several wines. Bottled at the estate with just a micro-dose of sulphur, without fining or filtration.

Suggestions for accompaniment

Grilled green asparagus, light lemon mousseline - Sea bream carpaccio, citrus fruits and olive oil - Savoie cheese and country bread.

Domain
Located in the commune of Cevins, the Domaine des Ardoisières was created in 1999 on a hillside that was cultivated a few decades ago but has since been completely reclaimed by the forest. Once the forest had been cleared, the vines were planted and cultivated from the outset using biodynamic methods. The hillside of Cevins is made up of a glacial lock facing south, with low dry stone walls. Gobelet pruning on a stile. Average yield: 20 hl/ha.
