IGP Vin des Allobroges, Quartz, Dom. des Ardoisières - 2022

This is the great white wine of the estate, a sort of "Coteau de Vernon" of the Savoie, produced from Altesse on a plot selection in the upper part of the hillside. Magnificent nose of almond and marshmallow, which wonderfully expresses the aromatic originality of the grape variety sublimated by a great terroir. The palate is rich and sunny, opulent, with a texture that marvellously envelops the taut character of the schistose terroir.

Viticulture

Located in the commune of Cevins, the Domaine des Ardoisières was created in 1999 on a hillside that was cultivated a few decades ago but has since been completely reclaimed by the forest. Once the forest had been cleared, the vines were planted and cultivated from the outset using biodynamic methods. The hillside of Cevins is made up of a glacial lock facing south, all in dry stone walls. Gobelet pruning on a stile. Average yield: 20 hl/ha.

Oenology

Vinification 100% in barrels, 25% new, 75% from 2 to 3 wines. Native yeast. Aged for 12 months. Light filtration.

Suggestions for accompaniment

Sea bass with porcini mushrooms - Pan-fried prawns with curry - Scallops a la plancha and candied endives.
