This wine was a great emotion for us, evoking the greatest myths of Château-Chalon and even some out-of-age Montrachet. Its smoothness is exceptional, as is its refinement of fragrance and texture. It is fat and ample but seems to weigh no more than a feather. The length is unheard of and in the same register. Exceptional!

Viticulture

At the end of August 2000, the grapes were harvested from a small plot at the top of Pago Macharnudo Alto, where the vines are between 50 and 65 years old. They were gently pressed to obtain a very clean and delicate must, which was then transferred to American oak barrels exclusively to begin alcoholic fermentation. The winemaking team closely monitored the progress of each barrel. Once fermentation was complete, all members agreed that one batch had exceptional finesse and complexity.

Oenology

Autumn arrived and November saw the first cold weather, which allowed the natural decanting of the lees and this time again this batch confirmed what everyone expected: it had the potential to become a great wine. With this in mind, it was mutated to 15° and naturally began its life as Fino, forming a very subtle veil of yeast on its surface. Over time, the flor failed to develop further. The wines were tasted and analysed a few times and the winemaking team clearly identified the characteristics of a Palo Cortado and the near disappearance of the flor. At this point, it was decided to mutate it to 17º. For such a wine to be vintage, the bung of the cask must be sealed under the supervision of the Consejo Regulador. Thanks to the subsequent maturation, the wine became much more concentrated (angels' share), which led to a considerable reduction in its liquid volume and the alcohol content increased remarkably. In June 2017, the team decided to bottle 500 half bottles from one cask. They are hand-numbered and presented in cases.

Suggestions for accompaniment

It should be enjoyed slightly chilled or, better still, at cellar temperature. It would be wonderful with bellota, salt-crusted sea bass or tuna teppanyaki.

Domain
In 1264, a group of 24 knights led the troops of King Alfonso X to reconquer the city of Jerez, which was under Moorish rule at the time. Once the city was reconquered, the king rewarded this group of noble knights with properties and lands. One of them, Alfonso Valdespino, also received a vineyard on the outskirts of the city. This is the first official record of a Valdespino involved in local viticulture, and although there is evidence of some commercial transactions in Jerez in 1430, A.R. Valdespino was established as a company (producing and selling wine) in 1875. In 1883, Valdespino became an official supplier to the Spanish Royal Household. In 1910, the company registered the brand "Sacristia" where the oldest wines of the winery are kept. In 1999, the Estévez family, renowned producers of Sherry and Brandy, acquired Valdespino and opened a new period. Valdespino is the only sherry house that controls the entire production process: vineyards, vinification, ageing and bottling. It has facilities in the three towns of the D.O.: Jerez, Sanlúcar and El Puerto. It is also one of the few owners of vineyards in Pago Macharnudo, considered a "grand cru". Finally, the winery is the only one in the appellation to produce single-vineyard wines: Inocente, Tío Diego, Viejo C.P. and Cardenal.
