Amontillado is one of the great Spanish dry oxidative whites. This one has a beautiful, brilliant amber colour. The nose is slightly bitter orange with hints of hazelnut, typical of great oxidative wines. On the palate it is very dry, ample and well balanced, very long and incredibly sapid.

Viticulture

The amontillado is in fact an old fino that has been aged for more than 8 years, in the case of the Tio Diego, it has been aged for more than 17 years. Amontillado, like fino, is constantly protected by the flor (veil), which allows for very careful oxidation. In principle, wines that do not have the characteristic freshness to produce fino (young) are destined for ageing and the production of amontillado.

Less than 2g of residual sugar and an alcohol content of 18.5%.

Suggestions for accompaniment

Ideal as an aperitif, to accompany rock fish soups or langoustines snacked a la plancha and sprinkled with sweet chilli.
