Viticulture
This estate - of excellent reputation - was created by Hansruedi Adank's father. Today it has 5.8 ha, of which 4.2 ha are pinot noir. The soils on Fläsch are schistose and slightly loamy. The approach to the vines is as natural as possible, in line with the organic movement, without making it a commercial argument.
Oenology
Selective manual harvesting. Spontaneous fermentation. Matured in 228-litre French oak barrels for 12 months on lees.
Suggestions for accompaniment
Roasted turbot and shallot confit - Sweetbreads browned with tarragon.
