Viticulture
This estate was created by Hansruedi Adank's father. Today it has 5.8 ha, of which 4.2 ha are pinot noir. The soils on Fläsch are schistose and slightly loamy. The approach to the vines is as natural as possible, in line with the organic movement, without making it a commercial argument.
Oenology
This cuvée is made from particularly strict and limited yields. Vinification and maturing for 12 months in Burgundy French oak barrels of different origins (Tronçais, Nevers and Allier).
Suggestions for accompaniment
Quasi of veal - Beef tartar - Risotto with the flavours of the undergrowth.
