Viticulture
The Herrenacker vineyard is a locality in the Fläscher Feld. Here the Adanks work with French pinot noir selections, rooted in deep soil with a higher proportion of clay.
Oenology
Selective manual harvesting. Spontaneous fermentation with 100% whole grapes in open wooden vats. Matured for 20 months in 228-litre French oak barrels. 50% new wood. Bottled unfiltered.
Suggestions for accompaniment
Quasi of veal - Beef tartar - Roasted guinea fowl with lime - Risotto with the flavours of the undergrowth.
