Viticulture
This estate - of excellent reputation - was created by Hansruedi Adank's father. Today it has 5.8 ha, of which 4.2 ha are pinot noir. The soils on Fläsch are schistose and slightly loamy. The approach to the vines is as natural as possible, in line with the organic movement, without making it a commercial argument.
Oenology
Inspired by the method used to produce great champagnes, the estate uses only pinot noir grapes. The wine is left to age on its lees for 30 months and the brut is disgorged at the appropriate dosage.
Suggestions for accompaniment
There are no limits to fantasy, and this wine is not just for toasting. It goes well with tarts flambées, risottos or pasta dishes with a creamy sauce.
