Viticulture
This estate was created by Hansruedi Adank's father. Today it has 5.8 ha, of which 4.2 ha are pinot noir. The soils on Fläsch are schistose and slightly loamy. The approach to the vines is as natural as possible, in line with the organic movement, without making it a commercial argument. This cuvée is a selection of old vines.
Oenology
Vinification and maturation in large barrels (500 and 1500 l) and in 3 and 4 year old barrels.
Suggestions for accompaniment
Quasi of veal - Beef tartar - Roasted guinea fowl with lime - Risotto with the flavours of the undergrowth.
