Viticulture
This estate was created by Hansruedi Adank's father. Today it has 5.8 ha, of which 4.2 ha are pinot noir. The soils on Fläsch are schistose and slightly loamy. The approach to the vines is as natural as possible, in line with the organic movement, without making it a commercial argument. This cuvée is a selection from a small plot on the Fläsch mountain, with 45 year old vines and very poor soil.
Oenology
Partial vinification in whole bunches and maturing in Burgundy French oak barrels of different origins.
Suggestions for accompaniment
Quasi of veal - Beef tartar - Roasted guinea fowl with lime - Risotto with the flavours of the undergrowth.
