Arbois, Chardonnay, Fumey Chatelain - 2023

Fresh and charming nose, with notes of candied lemon, kumquat and orange zest, accompanied by hints of pear, mirabelle plum and quince. After aeration, touches of dried fruit, lightly roasted hazelnut and white flowers appear. The palate is lively and taut, carried by a beautiful acidity. Flavours of pineapple, Williams pear and peach pit are enhanced by a hint of toasted sesame. The finish is long and precise, lingering on notes of bitter citrus and incisive minerality.

Oenology

Fermentation and ageing in 500L and 228L barrels for 1½ years.

Pan-fried scallops, parsnip purée and candied lemon - Trout or Arctic char, brown butter and toasted almonds - Risotto with green asparagus and lemon zest.
