Viticulture
The Vignoble du Rêveur vineyards are located in the heart of Bennwihr and lie on a collapse ditch dating back 2 million years to the Quaternary period. This collapse ditch favoured the spreading of alluvial deposits in the central region, whose debris is made up of materials from the granitic and gneissic basement of the Vosges and the Black Forest.
Oenology
The vines are passionately cultivated according to the demanding principles of Biodynamics, and the wines proudly bear DEMETER certification, a guarantee of purity and respect for the terroir. In a spirit of drinkability in a hot vintage with highly concentrated grapes. The winemakers decided to press part of the grapes directly (20% of the Pinots) and macerate the remaining 80% of the destemmed grapes. Maceration for around 10 days.
Suggestions for accompaniment
Carpaccio of sea bass with lemon, - Tomato and burrata salad, - Roast chicken with herbs and citrus zest.
