Viticulture

The Vignoble du Rêveur vineyards are located in the heart of Bennwihr and lie on a collapse ditch dating back 2 million years to the Quaternary period. This collapse ditch favoured the spreading of alluvial deposits in the central region, whose debris is made up of materials from the granitic and gneissic basement of the Vosges and the Black Forest.

Oenology

The vines are passionately cultivated according to the demanding principles of Biodynamics, and the wines proudly bear DEMETER certification, a guarantee of purity and respect for the terroir. Direct pressing of Pinot Noir and Pinot Gris. Destemming of the Pinot Blanc grapes, macerated in the Pinot Noir and Pinot Gris juices for 4 days to give the wine structure.
