This Psi cuvée is made from Pinot Noir grapes grown on different plots in the villages of Reigny, Bué and Sancerre. The letter Psi, with its three lines coming together to form one, perfectly symbolises the spirit of this cuvée.
Oenology
Hand-picked, the grapes are meticulously sorted and 20% of them are vatted as whole grapes, while the rest are destemmed. This is followed by a maceration period of around three weeks, during which fermentation takes place. At this stage, only light pumping over is carried out. After running off, the different parcels are matured for 18 months in three different containers: concrete eggs, wooden tuns and stainless steel vats.
