This cuvée comes from a parcel of Sauvignon Blanc planted in 2010 in the Montchauvy area. This caillottes terroir, on a limestone plateau, faces south-east. The soil is shallow, but the fissured limestone subsoil keeps the vines well supplied with water and minerals.
Oenology
After hand-harvesting, the juice was cold settled and then fermented in stainless steel vats. A long ageing period of 18 months on the lees, followed by light filtration before bottling, allowed this wine to express the best of its terroir.
Suggestions for accompaniment
Oysters - Sea bass tartar with truffles - Grilled Saint-Pierre - Pike with beurre blanc.
