Viticulture
The vines from which the Epsilon cuvée is made were planted in 1972 on Kimmeridgian marl soils. These plots, registered as Vignoble de Derrière Reigny, are the last vines grafted and planted by Sébastien's grandfather and father. This massal selection, carried out by them, unfortunately only represents a small part of the estate, which is why Epsilon, being used to designate small numbers, has given its name to this cuvée.
Oenology
The grapes were picked by hand on 25 September. The juice was cold settled, then fermented in ovoid concrete vats. Long ageing on the lees for 18 months, followed by light filtration before bottling, produced a wine that expresses its terroir to the full.
Suggestions for accompaniment
Oysters - Sea bass tartar with truffles - Grilled Saint-Pierre - Pike with beurre blanc.
