The Saint Hippolyte terroir is steeply sloped and terraced. It is a complex vineyard, bringing together the earliest grape varieties and Riesling in a salty symphony. The wines have a mineral structure and the subtle effervescent acidity of the Granit de Thannenkirch. On the palate, the acid structure is always impressive with its tactile precision, intense salivation and acidic vibrato.
