The terroir of Saint Hippolyte, on a steep slope, with historic terraces, faces south and is made up of very degraded, poor and thin granite; it is a complex vineyard, combining the earliest grape varieties and Riesling.
Vinification and maturing in large barrels.

It is perfect as a starter, with raw or cooked vegetables (asparagus), with all types of tartars, with Japanese cuisine and with fresh goat cheese.
