Rarely has Raymond Paccot vinified a rosé so full-bodied. It's simple, it's a "little bomb"! Cherry-coloured, it has an intense perfume of wild strawberries, blackcurrants and fresh pomegranate. The attack is silky, and continues on a very pleasant fat juice, with a lingering taste of red fruits au gratin and spices. A real sunny wine!

Viticulture

In order to maintain its racy character and fresh aromas, Pinot Noir Rosé (also called Oeil-de-Perdrix) is a wine that requires "cool" terroirs. The Domaine's Pinot Rosé comes from parcels selected according to this criterion, including "La Girarde": a steeply sloping hillside (40 to 50%) that enjoys warm days but very cool nights.

Oenology

After a delicate de-stemming and a short maceration (24 to 36 hours, depending on the vintage), a slow pressing extracts the aromas and the first tannins from the grapes.

Suggestions for accompaniment

To accompany cold dishes, salads, tapas, terrines or as an aperitif.

Domain
The Domaine de la Colombe is descended from an immigrant family from Savoy. Since 1978, he has been cultivating the family vineyards in the La Côte region, and represents the third generation of Paccot winemakers. However, before coming back, he was first a teacher and then travelled, working in wineries in California and Spain. He only decided to return home when his father wanted to sell his vineyards. He is an open, articulate and humble man. For many years, Domaine de la Colombe has built its reputation through its stylish and vibrant wines, which reflect as closely as possible the truth and energy of their place, thanks to cultivation methods (organic and then biodynamic) and maturing methods that respect natural rhythms.
