La Côte, La Colombe grise Réserve, Colombe - R. Paccot - 2020

Raymond Paccot is well known for his Chasselas wines, but he also makes a Pinot Gris which is one of the best in Switzerland, and which has a remarkable capacity for ageing! Made from old vines, it is a racy wine, with a nice dry extract, aromatic, with yellow-fleshed fruits. It finishes on lemon zest in a very invigorating way. Superb!

Viticulture

This cuvée is produced from the best pinot gris grapes grown on plots of land that are cultivated using biodynamic methods. The parcels are located in both Mont-sur-Rolle and Féchy.

Oenology

The alcoholic fermentation is carried out slowly and the great maturity of the harvested grapes means that malolactic fermentation is not carried out. Aged on fine lees in vats and barrels.

Suggestions for accompaniment

Pike quenelles in sauce - Salmon quiche - Seafood risotto.

Domain
The Domaine de la Colombe is descended from an immigrant family from Savoy. Since 1978, he has been cultivating the family vineyards in the La Côte region, and represents the third generation of Paccot winemakers. However, before coming back, he was first a teacher and then travelled, working in wineries in California and Spain. He only decided to return home when his father wanted to sell his vineyards. He is an open, articulate and humble man. For many years, Domaine de la Colombe has built its reputation through its stylish and vibrant wines, which reflect as closely as possible the truth and energy of their place, thanks to cultivation methods (organic and then biodynamic) and maturing methods that respect natural rhythms.
