La Côte, Féchy Brez GC, Colombe - R. Paccot - 2021

Raymond, Violaine and Laura Paccot produce Chasselas from terroirs that can serve as models for the entire Côte Vaudoise. They have produced a wonderful Brez, very pure in its aromatic expression, with delicate fruity notes, a precise structure and a playful grace. The saline and salivating length is that of local wines!

Viticulture

Le Brez is made from two parcels located to the east of the village of Féchy and benefiting from the same terroir with deep-rooted brown calcareous soil. The cultivation methods are very much inspired by biodynamics (respect for the life of the soil).

Oenology

The harvest is entirely manual. Slow pressing and slow spontaneous fermentation (indigenous yeasts). Aged in vats on fine lees.

Fillets of perch meunière - Arctic char with lemon butter - Cheese.
