Le Brez is made from two parcels located to the east of the village of Féchy and benefiting from the same terroir with deep-rooted brown calcareous soil. The cultivation methods are very much inspired by biodynamics (respect for the life of the soil).
The harvest is entirely manual. Slow pressing and slow spontaneous fermentation (indigenous yeasts). Aged in vats on fine lees.

Fillets of perch meunière - Arctic char with lemon butter - Cheese.
