With its light yellow colour, this wine offers a beautiful palette of citrus and exotic fruits on the nose. We can also find some floral notes. The palate is long and full-bodied, combining roundness and vivacity. It is a wine of character, with great finesse and elegance. Its good acidity ensures that it will develop into a complex wine over the next few years.

Technique

Viticulture

Toli is the name of the parcel from which the grapes come, located on the upper part of the Raron vineyard, at an altitude of almost 900 metres. The grapes come from a single terraced plot in the Raron vineyard. Light, chalky soil from scree.

Oenology

48 hours of pre-fermentation maceration. Vinification for 75% in stainless steel tanks, 25% in barrels, without malolactic fermentation, with an ageing period of 6 months on fine lees.

Suggestions for accompaniment

Aperitifs, mountain cheeses, Valaisan dishes, fish and seafood.

Domain

Originaire de Fribourg, Romain Cipolla a découvert le monde du vin au gymnase lors d’une dégustation avec quelques amis. Sa passion était née. Il s’est formé ensuite en œnologie et en viticulture. Après des stages chez Claudy Clavien à Miège et chez Philippe Constantin à Salquenen, Romain a poursuivi sa quête et s’est installé dans le Haut Valais en 2014. A Rarogne plus précisément, lieu cher à celles et ceux qui aiment Rilke. Romain Cipolla y travaille 2.5 ha de vignes en coteau entre Rarogne, St- German et Visperterminen ; certaines, très escarpées avec des pentes à plus de 30 % rendant toute mécanisation impossible, étaient vouées à la disparition. Il y pratique une viticulture bio et en tire des vins d’une grande pureté.
