Viticulture
Vijariego Blanco's vines are grown in a single royal cordon, in south-facing vineyards, which allows the grapes to ripen fully and acquire greater intensity. Viticulture is organic, with no use of herbicides or systemic treatments. All work in the vineyard is carried out by hand.
Oenology
The grapes are hand harvested and gently pressed before fermentation with native yeasts in neutral oak barrels. The wine is then left to mature on lees in 500 liter barrels. The wine is bottled unfined and bottled without filtration.

Seared Hake • Veal tartar and sun-dried tomatoes • Cheese.
