Viticulture
Malvasía Volcánica is a cross between Malvasía Aromática and Marmajuelo. The rooted vines are grown in a single royal cordon, on sandy volcanic soils with cover crops. The grapes are hand-picked and gently pressed before being fermented with indigenous yeasts in neutral oak tuns. The wine is then matured on its lees in 25 hl tuns. It is bottled without fining or filtration.
