Viticulture
Verdello is the same variety as the one known as Verdelho in Madeira. The rooted vines are grown in a single royat cordon on rocky volcanic soils, with cover crops. The vines are grown organically, without herbicides or systemic treatments. All work in the vineyards is carried out by hand. The grapes are harvested by hand and gently pressed before fermenting with indigenous yeasts in neutral oak barrels. The wine is then matured on its lees in neutral 500-litre barrels and 15-hl casks. It is bottled without fining or filtration.
Oenology
The wine is fermented in 1,500 litre oak vats with indigenous yeasts. Aged for 10 months in contact with the lees in the same vats where it ferments.
