Technique
Viticulture
The vines are grown organically, without the use of herbicides or systemic treatments. All work in the vineyards is carried out by hand. The hand-picked grapes are gently pressed before fermenting with indigenous yeasts in neutral oak barrels. The wines are bottled without fining or filtration.
Oenology
Barrel fermented with indigenous yeast, aged 9 months on lees in 500L barrels.
Suggestions for accompaniment
Hake with snacks • Veal tartar and sun-dried tomatoes • Cheese.
