Chardonnay largely dominates the appellation and produces finely crafted whites, carried by aromas of white flowers and light-fleshed fruits. Pinot Noir expresses itself in finely structured reds, marked by cherry, raspberry and a touch of sweet spices. The whites offer a straightforward structure with beautiful minerality, often supported by measured ageing that adds volume without masking the purity of the fruit. Ageing, vintage and food pairings

The whites can age well for five to eight years, developing more complex notes of honey and dried fruit. The reds gain depth with a few years in the cellar, without losing their natural freshness. Cool vintages accentuate the tension, while warmer years bring greater maturity. At the table, whites accompany grilled fish, poultry or fresh cheeses, while reds pair well with white meats or vegetarian dishes.
