Viticulture
Les Oxfordiennes comes from the Les Claveaux vineyard in the commune of Rully, which is planted in white marl known as Oxfordienne. The vineyard was planted partly in 1995 and partly in 2019, at a very high density (as high as 12,500 vines per hectare), with up to 50 different selections of Chardonnay strains, both massal and clonal.
Oenology
Pneumatic pressing of the whole harvest. Natural yeast. Alcoholic fermentation (11 months) and malolactic fermentation in barrels (50% new). Light fining and filtration on a pure cellulose plate.
Suggestions for accompaniment
Frogs' legs in pastry with watercress - Grilled pike-perch with lemon butter - Goat cheese.
