Technique
Viticulture
Cambrian soil composed mainly of decomposing brown shale. Planting density: 5000 vines/ha. Plantation in terraces with a goblet system. Mediterranean climate and very windy. The tramontane is almost a daily occurrence. Average age of the vines: 70 years. Yield: 20hL/ha. All the plots are spread out on the coastal fringe of Banyuls-sur-Mer.
Oenology
Hand picked in 20 kg containers, harvested when the grapes are well matured. Fermentation in stainless steel tanks. Maturation on grain. Aged in stainless steel vats and bottled early.
Suggestions for accompaniment
Ideal with dark chocolate desserts, but also with spicy dishes such as beef rib cooked in a pepper crust or duck breast with cherries.
