Technique

Viticulture

Age of the plot: 40 years. Clay-limestone soil. Certified Organic Agriculture by Ecocert.

Oenology

Harvested by hand, this wine is the result of a long pressing of whole bunches and fermentation in stainless steel vats with indigenous yeasts. Ageing on lees in vats, followed by malolactic fermentation, gives this wine its depth. Racked by gravity, it is bottled by Cyprien Arlaud during a favourable lunar cycle. Certified organic.
