If you're a fan of fine, lightly coloured, fragrant and refined Pinots, this is the wine for you! Tom Litwan, the artist of the divine grape variety that he is, favours whole grapes here to bring out the floral (rose, violet), minty, peppery and subtle aspects. The palate is taut, straightforward, nervous, frank and fresh, sublimating the vintage. We love this wine.

Viticulture

Since 2006, the estate has extended its range to include wines from various vineyards around Schinznach in the canton of Aargau. Tom Litwan does not come from a wine-growing background, but discovered his passion for wine in Burgundy, then trained as a winemaker by working for 8 years at Domaine des Balisiers in Geneva, a pioneer of biodynamic viticulture in Switzerland. He has been certified since 2010 and has held the Démeter label since 2014.

Oenology

Herznach is the name of the village and Chraibel is the name of the vineyard, meaning "mound of crows". Vine planted in 1986. Swiss sel. Terroir: former river bed, compact alluvium. The soil suffers very quickly from dryness. Whenever possible, the grapes are harvested whole. Aged for 18 months in Burgundy barrels. Only 1 or 2 barrels produced.

Domain
For Tom Litwan, the adventure really began in 2006. Soon, the reputation of his wines began to grow, gradually extending beyond the circle of initiates to which it was conceived. In 2018, Tom took over the vineyard of Walter Haefliger in Oberhof, a local winemaker who has always worked in biodynamic viticulture, and now has 5.5 hectares of vines cultivated according to biodynamic principles. But, he says with humour, "I don't own anything. I started with nothing and I won't get anywhere! Not sure! Judging by the quality of his Pinot Noir cuvées, we can even say that this is a joke: very quickly his wines arouse the interest of wine lovers as much as of prescribers and journalists.
