In the demanding 2021 vintage, Tom Litwan produced only one Chardonnay, which was very small in volume. The initial nose is smoky and toasty, with citrus fruit, reminiscent of some of the new-school, sulphur-free Chenins. The attack is sappy and vinous, for an intense wine with length and fruit. Ideally, it should be left to rest in the bottle for a few months to settle, but there'll be a nice surprise in the end! Decant 1 hour to drink young.

Viticulture

Since 2006, the estate has expanded its range of wines from various vineyards around Schinznach in the canton of Aargau. Tom Litwan does not come from a wine background but discovered his passion for wine in Burgundy, then trained as a winemaker by working for 8 years at the Domaine des Balisiers in Geneva, a pioneer of biodynamic farming in Switzerland. He has been certified since 2010 and has been awarded the Démeter label since 2014.

Domain

Pour Tom Litwan, l’aventure démarre véritablement en 2006. Assez vite, la notoriété de ses vins commence à croître, débordant peu à peu le cercle d’initiés auquel elle était con née. Nouvelle étape en 2018 avec la reprise du vignoble de Walter Haefliger à Oberhof, vigneron local qui a toujours travaillé en biodynamie.

Aujourd’hui, Tom dispose de 5.5 ha de vignes, cultivées selon les principes de la biodynamie. Mais, précise-t-il avec humour, « rien ne m’appartient. Je suis parti de rien et je n’arriverai à rien ! » Pas sûr ! À en juger par la qualité de ses cuvées parcellaires de Pinot noir, on peut même affirmer qu’il s’agit là d’une boutade : très rapidement ses vins suscitent l’intérêt des amateurs autant que des prescripteurs et journalistes.
