Tom Litwan works miracles and his wines are resplendent with brilliance and finesse! In fact, this is the most beautiful nose this cuvée has ever had (redcurrant, morello cherry), with lots of spices reminiscent of certain Volnay wines. The palate is fresh and chiselled, juicy and long, with a kind of "dry sweetness" due to ideally ripe grapes. An obvious vintage!

Viticulture

Since 2006, the estate has expanded its range of wines from various vineyards around Schinznach in the canton of Aargau. Tom Litwan does not come from a wine background but discovered his passion for wine in Burgundy, then trained as a winemaker by working for 8 years at the Domaine des Balisiers in Geneva, a pioneer of biodynamic farming in Switzerland. He has been certified since 2010 and has been awarded the Démeter label since 2014.

Oenology

Elfingen is a terroir with the same layers as the Thaleim Chalhofe, but with a little less complexity. Cultivation in small terraces, the load on the vine is a little higher than on the Chalhofe. Marly-limestone soil, 90 ares planted to Pinot. Whenever possible, he works with whole grapes. Aged for 18 months in Burgundy rooms.

Domain
For Tom Litwan, the adventure really began in 2006. Soon, the reputation of his wines began to grow, gradually extending beyond the circle of initiates to which it was conceived. In 2018, Tom took over the vineyard of Walter Haefliger in Oberhof, a local winemaker who has always worked in biodynamic viticulture, and now has 5.5 hectares of vines cultivated according to biodynamic principles. But, he says with humour, "I don't own anything. I started with nothing and I won't get anywhere! Not sure! Judging by the quality of his Pinot Noir cuvées, we can even say that this is a joke: very quickly his wines arouse the interest of wine lovers as much as of prescribers and journalists.
