2016 is the first vintage of this new bubble signed Tom Litwan, disgorged in December 2020, after 1 year in barrel, 3 years on laths and dosed at 1.2 gr/litre. The first nose is fermentative, with aromas of orchard fruits, reminiscent of certain natural "Chenin" wines. A lot of vinosity and fullness in the mouth, with a form of "dry sweetness", richness for this full wine with a tense and chalky, saline length, which will continue to grow.

Viticulture

Since 2006, the estate has expanded its range of wines from various vineyards around Schinznach in the canton of Aargau. Tom Litwan does not come from a wine background but discovered his passion for wine in Burgundy, then trained as a winemaker by working for 8 years at the Domaine des Balisiers in Geneva, a pioneer of biodynamic farming in Switzerland. He has been certified since 2010 and has been awarded the Démeter label since 2014.

Oenology

One year in wood, 3 years on laths, disgorged in December 2020, dosage 1.2 gr/litre, 1'500 bts produced.

Suggestions for accompaniment

It can be decanted before serving and drunk as an aperitif or with lake fish or an assortment of Swiss hard cheeses.

Domain
For Tom Litwan, the adventure really began in 2006. Soon, the reputation of his wines began to grow, gradually extending beyond the circle of initiates to which it was conceived. In 2018, Tom took over the vineyard of Walter Haefliger in Oberhof, a local winemaker who has always worked in biodynamic viticulture, and now has 5.5 hectares of vines cultivated according to biodynamic principles. But, he says with humour, "I don't own anything. I started with nothing and I won't get anywhere! Not sure! Judging by the quality of his Pinot Noir cuvées, we can even say that this is a joke: very quickly his wines arouse the interest of wine lovers as much as of prescribers and journalists.
