This is probably the windiest bubble Tom Litwan has ever produced! The wine is rosé in colour, with bronze-orange highlights. It opens with notes of cherry, rose and spices, with a touch of breeding that ennobles the whole. The attack is relatively rich and powerful, the palate vinous, with a lot of fullness. The length is fresh, with a chalky chewy sensation. It has everything to age well, in a Montagne de Reims style!

Viticulture

Since 2006, the estate has expanded its range of wines from different vineyards around Schinznach in the canton of Aargau. Tom Litwan does not come from a wine background but discovered his passion for wine in Burgundy, then trained as a winemaker by working for 8 years at the Domaine des Balisiers in Geneva, a pioneer of biodynamic farming in Switzerland. He has been certified since 2010 and has been awarded the Démeter label since 2014.

Oenology

One year in wood, 3 years on laths, disgorged in August 2020, dosage 1.2 gr/litre, 1'500 bts produced.

Domain
For Tom Litwan, the adventure really began in 2006. Soon, the reputation of his wines began to grow, gradually extending beyond the circle of initiates to which it was conceived. In 2018, Tom took over the vineyard of Walter Haefliger in Oberhof, a local winemaker who has always worked in biodynamic viticulture, and now has 5.5 hectares of vines cultivated according to biodynamic principles. But, he says with humour, "I don't own anything. I started with nothing and I won't get anywhere! Not sure! Judging by the quality of his Pinot Noir cuvées, we can even say that this is a joke: very quickly his wines arouse the interest of wine lovers as much as of prescribers and journalists.
