From an old vineyard situated on a limestone substratum at the foot of the hillside, this very beautiful Chardonnay opens with a feeling of ageing that respects the very beautiful raw material (notes of fennel, aniseed, mint). The palate is round, smooth in texture, combining concentration and softness. According to the winemaker, it takes on tension with ageing, so don't be in too much of a hurry to open it or decant it!

Viticulture

Since 2006, the estate has expanded its range of wines from various vineyards around Schinznach in the canton of Aargau. Tom Litwan does not come from a wine background but discovered his passion for wine in Burgundy, then trained as a winemaker by working for 8 years at the Domaine des Balisiers in Geneva, a pioneer of biodynamic farming in Switzerland. He has been certified since 2010 and has been awarded the Démeter label since 2014.

Domain
For Tom Litwan, the adventure really began in 2006. Soon, the reputation of his wines began to grow, gradually extending beyond the circle of initiates to which it was conceived. In 2018, Tom took over the vineyard of Walter Haefliger in Oberhof, a local winemaker who has always worked in biodynamic viticulture, and now has 5.5 hectares of vines cultivated according to biodynamic principles. But, he says with humour, "I don't own anything. I started with nothing and I won't get anywhere! Not sure! Judging by the quality of his Pinot Noir cuvées, we can even say that this is a joke: very quickly his wines arouse the interest of wine lovers as much as of prescribers and journalists.
