They say myths are forever! So it is with this cult wine that we have the pleasure of sending to our mailbox, to celebrate the link that unites us with the Maye family. The oldest vines of the place called "Pré des Pierres" give this marvellous wine a nose of black fruits, pepper and candied violet. The body combines ample volume with a tight structure. The ageing potential is fantastic, the breed undeniable!

Technique

Viticulture

Vines located in the area known as "Prés des Pierres", with very gravelly limestone soil. Severe limitation of the yield at the beginning of July (green harvest) and qualitative limitation after veraison, harvested at 95O Oe, manual harvest. The estate is in organic conversion (biosuisse).

Oenology

Destemmed harvest, maceration and alcoholic fermentation over 21 days with punching down twice a day. Aged for 20 months, including 12 months in barrels with decanting every 2 months. Bottled without filtration.
