Lively, mineral, with a generous structure. This Sauvignon opens with notes of blackcurrant and citrus, before revealing aromas of white flowers and citrus fruits on the palate. The slight richness on the finish makes it a refined wine, far from bland: a lovely surprise from Cipolla.

Technique

Viticulture

Grown on a hill that has been inhabited since the Stone Age, the vines are surrounded by unique flora and fauna. Light, limestone-rich soils derived from scree. (Elevation: 750 m).

Oenology

The wine is vinified in stainless steel tanks. Vinification is traditional, without malolactic fermentation, and the wine is aged on fine lees.

Suggestions for accompaniment

Cheese gougères • Grilled trout fillet inlemon sauce • Pad Thai with shrimp.

Originally from Fribourg, Romain Cipolla discovered the world of wine at the gym during a tasting session with some friends. His passion was born. He then trained in oenology and viticulture. After internships with Claudy Clavien in Miège and Philippe Constantin in Salquenen, Romain continued his quest and moved to the Upper Valais in 2014. In Rarogne more precisely, a place dear to those who love Rilke. Romain Cipolla works 2.5 ha of vineyards on the slopes between Rarogne, St-German and Visperterminen; some of them, very steep with slopes of more than 30% making mechanisation impossible, were doomed to disappear. He practices organic viticulture and produces wines of great purity.
