Viticulture

The 2007 wine year began with a rainy winter, allowing water reserves to be replenished after several years of drought. Spring and early summer were cool and rainy, with no heat peaks. In September, a dry spell set in, with temperatures between 35 and 38 degrees, favouring good ripening of the grapes. This combination of conditions ensures well-balanced musts, giving racy, elegant, fruity and intense wines, while retaining a beautiful freshness.

Oenology

After the harvest, these wines are selected by the estate's panel of tasters, then matured in oak tuns for two winters. They are then tasted again the following spring. If their quality proves exceptional, they are retained for the final blend.

Suggestions for accompaniment

To be drunk after a few years of ageing with a jugged hare, a stilton, a dark chocolate dessert or to accompany a cigar.
