Pinot Noir, Steinschlag, Weingut Cipolla - 2022

This wine has a frank red colour and a nose of cherry and raspberry accompanied by a few notes of dried flowers. On the palate, it is supple and tasty with aromas of red fruit and undergrowth, supported by an acidity that gives it freshness. A nice body and still young tannins ensure a few years of complexity.

Viticulture

Steinschlag is the name of the parcel from which the grapes come, located in the upper part of the Raron vineyard, at an altitude of almost 900 metres. The grapes come from a single plot of vines grown in goblet shape at a high planting density, located in the steep vineyards of Raron. Very low yields. Very stony, light and chalky soil from scree.

Oenology

Indigenous yeasts, 2 pumping overs per day, 6 months maturation on fine lees.

Suggestions for accompaniment

Braised veal aiguillette - Stuffed vegetables Niçoise style - Saddle of rabbit with wild thyme - Sweetbreads.

Originally from Fribourg, Romain Cipolla discovered the world of wine at the gym during a tasting session with some friends. His passion was born. He then trained in oenology and viticulture. After internships with Claudy Clavien in Miège and Philippe Constantin in Salquenen, Romain continued his quest and moved to the Upper Valais in 2014. In Rarogne more precisely, a place dear to those who love Rilke. Romain Cipolla works 2.5 ha of vineyards on the slopes between Rarogne, St-German and Visperterminen; some of them, very steep with slopes of more than 30% making mechanisation impossible, were doomed to disappear. He practices organic viticulture and produces wines of great purity.
