  • Grape variety(ies): Petite arvine

Benoît Dorsaz's Quintessence is a magnificent wood-aged arvine: a shimmering nose of truffle, lime blossom honey and white chocolate. And above all, a superb rich but balanced wine, with a very noble spicy taste, a fine mouthfeel and a full body, which calls for the most refined dishes. One of the best Petite Arvine 'fût de chêne' in the Valais, by far!

Technique

Viticulture

Commune of Fully, terroir of the Les Perches estate: gneiss with slightly chalky moraines. This arvine comes from the heart of the family estate.

Oenology

Manual harvesting in passages, qualitative sorting, search for optimal maturity. Slow alcoholic fermentation: 70% in barrels after settling and 30% in tanks after settling. Fermentation time varies from 16 to 21 days depending on the barrels. No malolactic fermentation. Aged 70% in barrels for 12 months and 30% in metal tanks on fine lees. After 12 months, these two wines are blended and kept for 6 months before bottling.

Suggestions for accompaniment

Great fish such as sole, saint pierre or sea bass will be the best companions for this gastronomic wine.
