Commune of Fully, terroir of the Les Perches estate: gneiss with slightly chalky moraines. This arvine comes from the heart of the family estate.
Oenology
Manual harvesting in passages, qualitative sorting, search for optimal maturity. Slow alcoholic fermentation: 70% in barrels after settling and 30% in tanks after settling. Fermentation time varies from 16 to 21 days depending on the barrels. No malolactic fermentation. Aged 70% in barrels for 12 months and 30% in metal tanks on fine lees. After 12 months, these two wines are blended and kept for 6 months before bottling.
Suggestions for accompaniment
Great fish such as sole, saint pierre or sea bass will be the best companions for this gastronomic wine.
Liquid geography
Issu d’une famille de vignerons, Benoît Dorsaz a grandi parmi les ceps de vigne. En 1986, il hérite d’une parcelle de chasselas. Dès lors, il loue les vignes de sa famille et entreprend le réencépagement du vignoble ainsi que la rénovation et l’agrandissement de la cave paternelle, avec le soutien de son épouse Maryline. Petit à petit, la propriété est agrandie en vue d'assurer une exploitation familiale pérenne.
