On the place called "Tsoume" on the Chamoson alluvial cone in a limestone soil. Made from old vines, cultivated in the shape of a Lyre, with a very low yield (35 hl/ha), harvested at 98° Oe. The estate is in the process of converting to organic farming (biosuisse).
Destemmed harvest, maceration with punching down for 21 days. Aged for 20 months, 12 months in 300-litre barrels and 8 months in concrete tanks. Bottled at the end of July without filtration.
Suggestions for accompaniment
To be drunk with a nice rib of beef grilled with vine shoots or a duck on the spit.
