Viticulture
This wine comes from young nebbiolo vines in the communes of Barolo and Novello, on light, limestone soils. The vines of Roccabella, in the commune of Sinio, are added to the vineyard, facing south. Guyot cultivation, natural grassing, green harvesting if necessary.
Oenology
Maceration for 15 days with temperature control, fermentation via indigenous yeasts, natural malolactics, and 6 months maturation in stainless steel vats to preserve the finesse and fruit.
Suggestions for accompaniment
Carne cruda (veal tartar) - Spit roast pork - Cheese.
