It offers an intense and delicate nose of small red and black fruits, rose petals, with smoky notes. The palate reveals a very dense material, with a racy and slender structure. Like any pure Vaudois, this wine needs time to reveal its depth and complexity. A short decanting, or better still, opening the bottle a few hours before tasting, will help it to open up.

Viticulture

This Pinot Noir de garde is made from vines that are forty years old or more, harvested in several selections: the berries are hand-selected at different stages of maturity, seeking a perfect complementarity between tannic richness and fullness of fruit.

Oenology

After a long maceration (more than 20 days), the wine is entirely aged in oak barrels for 10 to 16 months, depending on the vintage. The wine is sometimes bottled without filtration, hence the possible formation of a deposit during ageing, a natural sign of the wine's integrity.

Roast sausage and pommes mousseline - Ham on the bone cooked in hay.

Domain
The Domaine de la Colombe is descended from an immigrant family from Savoy. Since 1978, he has been cultivating the family vineyards in the La Côte region, and represents the third generation of Paccot winemakers. However, before coming back, he was first a teacher and then travelled, working in wineries in California and Spain. He only decided to return home when his father wanted to sell his vineyards. He is an open, articulate and humble man. For many years, Domaine de la Colombe has built its reputation through its stylish and vibrant wines, which reflect as closely as possible the truth and energy of their place, thanks to cultivation methods (organic and then biodynamic) and maturing methods that respect natural rhythms.
