Technique
Oenology
The wine is bottled just before the end of the alcoholic fermentation. The indigenous yeasts then naturally finish the last sugars. The carbon dioxide that is released is trapped in the bottle and dissolves. This is how the bubbles are created. There is no added sulphur.
