La Côte, Féchy Brez GC, Colombe - R. Paccot - 2023

Raymond, Violaine and Laura Paccot produce Chasselas from terroirs that can serve as models for the entire Côte Vaudoise. Here, they have produced a wonderful Brez, very pure in its aromatic expression, with delicate, fruity notes, a precise structure and a playful grace. The saline, salivating finish is that of a local wine!

Viticulture

Le Brez is made from two parcels located to the east of the village of Féchy and benefiting from the same terroir with deep-rooted brown calcareous soil. The cultivation methods are very much inspired by biodynamics (respect for the life of the soil).

Oenology

The harvest is entirely manual. Slow pressing and slow spontaneous fermentation (indigenous yeasts). Aged in vats on fine lees.

Suggestions for accompaniment

Grilled salmon • Arctic char with lemon butter • Cheese.

Domain
The Domaine de la Colombe is descended from an immigrant family from Savoy. Since 1978, he has been cultivating the family vineyards in the La Côte region, and represents the third generation of Paccot winemakers. However, before coming back, he was first a teacher and then travelled, working in wineries in California and Spain. He only decided to return home when his father wanted to sell his vineyards. He is an open, articulate and humble man. For many years, Domaine de la Colombe has built its reputation through its stylish and vibrant wines, which reflect as closely as possible the truth and energy of their place, thanks to cultivation methods (organic and then biodynamic) and maturing methods that respect natural rhythms.
