This cuvée comes from a unique terroir of rolled pebbles on the edge of the Châteauneuf-du-Pape appellation, a short distance away on the La Crau plateau. The vines are cultivated without pesticides or insecticides and the manure is of natural origin. The soil is worked without weedkillers to maintain the aeration and suppleness of the soil. Massal selection. Yield of 30 hl/ha. Harvested in small crates.
Pneumatic pressing. Vinification in vats. Aged on the lees, 60% in vats and 40% in barrels (of which 25% is new wood) with stirring for 6 months.

Aperitif - Monkfish with curry - Chicken breast with satay.
